Friday, February 17 through Friday, February 24 - Summertime Exploration Challenge

Gamble Rogers Memorial State Recreation Area
Kids- bring a book and camera to a state park and take the challenge! Parents and kids can go online to print the rules and checklist of activities. Kids are required to complete five activities on the list, including reading a book in a state park, and send a photo of each one to enter the contest. Good luck! You will earn a FREE pass for you and your family to a State Park!

Who: Children 18 and under.
How: Check the State Park website and print off the form and rules.  You will need a camera and a book of choice.
Cost: Park fees. Most range from $5 to $10 per day.

Duct Tape Mardi Gras Masks


My boys and I attended a festival quite a few months ago, where they were doing crafts with duct tape.  I, at the time, had never made anything with duct tape, so we nervously sat down and made a fabulous crown using only duct tape.

Ever since, I have found that you can make just about anything with duct tape.  Today, we are making Duct Tape Masks for Mardi Gras.

Great Backyard Bird Count: February 17-20


It's easy to help save the birds!

The Great Backyard Bird Count (GBBC) is an annual event (now in it's 15th year!) that gives the public an opportunity to help scientists track the whereabouts of bird species across the continent. All it requires is at least 15 minutes a day (you can put in more time) for 4 days. This year it's from February 17-20.

Jambalaya

While this traditional New Orleans dish may be too spicy for younger kids, it is a favorite in our household.

New Orleans Jambalaya

  • 1 large onion, chopped
  • 1 large red bell pepper, chopped
  • 2 Tablespoons minced garlic
  • 12 ounces andouille chicken sausage, sliced (can substitute smoked turkey sausage)
  • 2 cups uncooked white rice
  • 2 teaspoons paprika
  • 2 teaspoons freshly ground black pepper
  • 2 teaspoons dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic salt
  • 1 bay leaf
  • 2 cans low-sodium chicken broth
  • 1 cup water ...

President's Day Recipe


George Washington's Cherry Turnovers

In honor of President's day, we thought we would share a festive recipe for Cherry Turnovers. We heard they were George Washington's favorite !!

1 pkg of frozen puff pastry

1 can of cherry pie filling

1 egg

1/2 cup chocolate chips

1/2 cup  heavy cream

 

Unfold the thawed puff pastry sheet and cut into 6 squares (you will get 6 squares out of one sheet.)

 

Fill each square with about 1 and 1/2 Tbsp of the cherry pie filling.

Strawberry Filled Cake Cones


Wrap the cones in aluminum foil, and place in cupcake pans. 

Follow cake mix directions of your choice, and fill the cone ½-1/3 full.  We used a strawberry box mix. 

Follow the cupcake directions for time and degree, as shown on your mix box, or your ‘from scratch’ recipe.

When finished baking, the cake should have filled the rest of the cone.

Let cool. 

With a sharp knife, lower blade into the center of the cone, twist, and pull out so that you have made a long thin opening ...
